Here at Two Blind Pigs we are committed to bring you the freshest ingredients, home made syrups and cocktail bitters. We base all our cocktails on organic and fair-trade spirits as much as possible. Our current list aims to bring herbaceous summer drinks and seductive late night concoctions inspired by the golden era and lovingly designed by Mixologist’s Justin Darnes & Robin Stafford.

Sagacious Zest

With its fresh sharp flavour and herbaceous notes of sage, this interesting little martini makes a wise choice for lazy afternoons or indeed the end of a busy day. Makes for a great aperitif, before a relaxing meal.

Organic Orange & Sage gin / Cointreau / Lemon / egg white from a lucky chicken

Frank & Dino

Designed to be the ultimate spring and summer drink. Clean, sharp and refreshing, the perfect upgrade from a G&T.

Vodka / Lime / secret Twilight syrup / Aperol / Coriander.

Modena Shrubbery.

Years ago the term Cocktail really only applied to a small group of mixed drinks & there were many other names used to define the style of drink. In Jerry Thomas’s 1862 book, ‘How to mix drinks” you’ll find a group of drinks known as Shrubs, which offered an interesting tangy quality by adding sweetened vinegar to the mix.

Our Modena Shrubbery uses Balsamic vinegar reduced with sugar, which oddly enough taste a lot like bonfire toffee.

Ginger & Blackberry Shrub Mix / Croizet VS Cognac / Bitters

Calico Jack

John "Calico Jack" Rackham is most remembered for two things the design of his Jolly Roger flag, and employing two of the most notorious female pirates of the age as part of his crew. The cocktail we’ve created utilized the kind of worldly products they might have had on their ships. It also tastes quite tough and ruthless with surprising depth and tang.

Demerara Rum / Apricot Brandy / Pomegranate molasses / Orange bitters

Murciélago Rita.

Not a Lamborghini, but an exotic version of the much loved Margarita.

Murciélago is the Spanish word for bat and the blue agave plant from which tequila is made is pollinated at night by bats. Agave Sap was 1^st distilled by Spanish troops in 1521 when they arrived in Mexico and were facing a serious problem – Sobriety.

Orange infused tequila / Jasmine & Lime Syrup/ lime / Gammel Dansk

Cassidy Preacher

A big strong Martini cocktail with a whack of rye whiskey, a spicy hint of ginger, and a tropical accent of passion fruit and blood orange.

Named after The Preacher comic book issue Blood & Whiskey, featuring Cassidy, an Alcoholic Vampire who preferred whiskey to blood.

Ginger infused whiskey/ Noilly Amber / passion fruit & blood orange

Pebo Bellini

A refreshing spin on the classic Bellini invented at Harry’s bar in Venice. Ours uses mouth-watering watermelon and a spicy hint of cloves.

Watermelon & clove / Prosecco

Black Chandelier

This beautiful sharp, fresh and bitter drink makes for a lounge lizard favourite after the sun goes down. Try it on it’s own or as an aperitif.

Some say the origin of the aperitif dates back to the ancient Egyptians whilst main records show that the apéritif first appeared in 1786 in Turin, Italy.

Grapefruit zest / Sweet vermouth / Damson gin / Picon

LOST & FORGOTTEN CLASSICS

We have three hand picked cocktails, which were commonplace on cocktail list of 100 years ago, but have since faded from memory. With the increased interest in vintage cocktails from Prohibition and before the three we’ve selected should give you a nice glimpse at a glamorous past and beg to be experienced.

Satan’s Whiskers.

This Cocktail 1^st Appeared in Harry Craddock’s Savoy Cocktail book in 1930. His patrons used to drink one of two ways “Straight or Curled” ours comes curled, but ask for it straight if you fancy dancing with the devil. Remember his tail is sharp!

Gin/Sweet & Dry Vermouth/Orange bitters/Grand marnier

The Secret Cocktail.

There’s a very good reason this drink is known as the secret cocktail gents, ask our staff why and they might just spill the truth. But remember, years ago cocktails where for serious drinkers so don’t get put off by the answer.

Gin/ Applejack/ Lemon/ House-made Grendine/ Egg White.

Knickerbocker a la Monsieur.

This exciting sunny Cocktail was first published in 1869 in William Terrington’s Cooling Cups & Dainty Drinks. On a hot day, rum lovers will be well catered to with strong fruity concoction.

Golden Rum / Cointreau / Raspberry Syrup / lemon / fruits

ESSENTIAL RENDITIONS

Mojito Bodeguita

Ernest Hemmingway’s Favourite tipples included a Grapefruit Daquiri and the classic Mojito. In this Rendition we’ve spiced the rum in house and added an extra refreshing zing with pink grapefruit syrup. Renamed after Hemmingway’s favourite bar in Havana.

Homemade Spiced Rum / Spearmint / Grapefruit zest syrup / lime

The Candied Cosmo

The ever-growing following of this trendy little drink is enough to reduce most bartenders to tears. We’ve decided to reinvent it with a bit more zest and a lot more layers. Thought to be an evolution of classic coolers such as the Cape Codder of c.1930, the year Ocean Spray Cranberry was first sold.

Candied Peel Syrup / Organic home infused Raspberry Vodka / Lime / Bitters / Fire

Caipirinha Thyme

According to 2007 figures, 1.5 billion liters of cachaca is consumed annually in brazil. With the likes of the Rio Carnival, it’s no wonder this Rhum Agricole based Cocktail is quickly becoming one of the worlds favourite party tipple. Ours is Infused with lemon thyme and has a cheeky splash of crème de peche to give you a flavour of the carnival.

Dessert Rose (from Death’n’Co cocktail bar, Lower East Side, NYC)

Each new cocktail menu will feature on drink to pay respect to the great bars and bar tenders of the world. This fantastic cocktail comes from New York’s Death’n’Co cocktail bar.

To begin we once again accompany the lovely ladies from Eclipse presenting 'The Court of a Thousand Dreams'

Last time the ladies event was an absolute hit and a sell out with just over a hundred people cramming in to see them work thier magic!

If you are in the vicinity of the Nave drop down tomorrow (Thursday 29th October) at 8pm.

We are going to be down there for the next four nights in a row with the folks over at the Nave wanting to spend a great deal of time with us.... Thursday to Sunday!

A Winter recipe to try at home.

Here's a great little creation I've concocted this week, in the 2 blind Pigs Organic Laboratory.

Fabulously easy and great for any Vegans or those of you just too lazy to spend hours beating egg whites, egg yolks and cream.

FIG-NOG

Add to a good food blender.
50ml Organic Rum or Cognac (not as easy to find organic Cognac)
125ml Organic Soya Milk (Regular milk works too if you prefer)
4 Organic Dried Figs
20ml Organic Maple Syrup
5 decent sized ice cubes
A sprinkle of Cinnamon
A grating of Nutmeg

AND BLEND!!!! (for 20 seconds)

Pour it out and garnish with a little more nutmeg.

taadaah!!!!

A really great thick and creamy cocktail to get you through the London winter.

the biggest up and coming artists in London! Sarah Kate Wilson!
She has requested that our drinks become part of the artwork where the brief for the show was to create drinks to match her vision of:

"a nonsensical world where frivolity and flirtation are at play"

Come along and see what we have created for this very special event. We promise you won't be disappointed!

A little something about the artist:

Sarah Kate Wilson is an emerging British abstract painter who has been the John Jones artist in residence since August 2009. Throughout her residency she has created ‘Lunar Rainbow’, a nonsensical world where frivolity and flirtation are at play transforming the project space gallery into an interactive painted environment. Walkways guide the viewer into the space where swings replace conventional viewing and seating platforms and works are observed whilst wading through a ball pool.

To accompany this playful exhibition Laurel Collective will be performing, and the Two Blind Pigs will be making glittery, popping candy cocktails!

Conventional vs Organic: You be the judge!

Here is a little table that really illustrates the differences between organic and conventional farming!

Tell us which one you would choose:

Conventional Farmers:

Apply chemical fertilizers to promote plant growth
Use chemical herbicides to manage weeds
Spray insecticides to reduce pests and disease
Give animals antibiotics, growth hormones and medications to prevent disease and spur growth

Organic Farmers:

Restricted use of artificial fertilisers or pesticides. Apply natural fertilizers such as manure or compost to feed soil and plants
Use crop rotation, hand wedding and mulching to manage weeds
Use beneficial birds, insects, traps to reduce pests and disease
Give animals organic feed or allow them access to outdoors. Use preventive measures such as rotational grazing, a balanced diet and clean housing to help minimise disease.

Why Organic Cocktails Are Better!

The choice to go with organic cocktails is really a simple one for the following reasons:

1) Organic drinks taste great!
It makes sense - well-balanced soils produce strong healthy plants that produce well balance strong delicious produce such as the organic vodkas and rums we use to mic our drinks.

2) Organic farms respect our water resources
The elimination of polluting chemicals and nitrogen leaching, done in combination with soil building, protects and conserves water resources.

3) Organic farmers build healthy soil

Soil is the foundation of the food chain. The primary focus of organic farming is to use practices that build healthy soils.

4) Organic farmers work in harmony with nature
Organic agricultural respects the balance demanded of a healthy ecosystem: wildlife is encouraged by including forage crops in rotation and by retaining fence rows, wetlands, and other natural areas

5) Organic producers strive to preserve diversity
The loss of a large variety of species (biodiversity) is one of the most pressing environmental concerns. The good news is that many organic farmers and gardeners have been collecting and preserving seeds, and growing unusual varieties for decades. Which means more delicious cocktail and flavor combination's for many decades to come!

What a great event and a great review.

That lovely lady Lily Vanilli was there with her cupcakes and the folk
over at Garufa were providing the finest steaks from Argentina to match
perfectly with our Mojitos!

By the end of the night the crowd had drunk us dry,
solid effort considering the amount of booze we carted into the venue!

Last Night Two Blind Pigs hit a home run at there first ever gig together.
Kicking off the season 2BP's Supported the amazingly talented group Eclipse last night in Islington. Two Blind Pigs created signature cocktails including the Eclipse Collins which went down a treat and after a fab performance by the Eclipse Girls we really got the party started!

Special Thanks to Sam for the PR and Agnieszka for washing the glasses just quicker than we could use them.

'Assemblage' sees the whole space taken over by a host of exciting creative types - there's live poetry, performances and recitals, various stalls and installations (with cool stuff like porcelain chandeliers, knitted wedding cakes and baroque wigs!) and the opening of new exhibition 'Meet Pamela' which includes mesmeric work by Laura Buckley.

In terms of food, Lily Vanilli are providing cupcakes while Spore Boys serve up mushroom-based recipes. And finally, for those of you whose appetite can only be sated by booze, there's cocktails courtesy of the lovely Two Blind Pigs.
